So who doesn’t love guacamole! This particular recipe I picked up whilst in Argentina – It smelled so good it literally dragged me into a strangers kitchen to find out what it was and I couldn’t believe it when I saw it was just plain and simple Guacamole! Honestly the few little changes in this recipe from the norm will make you an avocado addict. The two killer ingredients that you can’t mess with are cream cheese and scotch bonnets.
- 4 ripe Avocados
- 3 Garlic Cloves
- Zest & Juice of 1 Lime
- 1 Scotch Bonnet Chilli
- 2-3 tbsp Olive Oil
- 1 Tbsp. Cream Cheese
- 1 handful of Fresh Coriander
- Sea Salt Flakes
- Black Pepper
Slice & Scrape out the Avocado flesh into your serving bowl.
Peel & grate the Garlic and add this onto the Avocado along with the Lime Zest.
Squeeze the juice from the whole Lime on top along with 2 tbsp Olive Oil.
Thinly slice up the Chilli (make sure you remove the seeds or it will be super spicy!)
Smash up the Avocado mixture with a fork until it all comes together – you want to keep it a little chunky so the dip has some texture.
Stir in the Cream Cheese and a handful of roughly chopped Coriander. Season with a pinch of Sea Salt Flakes & Black Pepper.
Serve with a final drizzle of Olive Oil and a sprinkle of Chilli Flakes.
- Make sure your Avocados are ripe (they need to be soft or this won’t work)
- When you smash your Avocados up it doesn’t need to all be perfectly smooth – it is nice to have a few chunks in there, but just make sure the majority is smashed. A fork is ideal for doing this and still keeping some texture to it.
- Scotch Bonnet Chilli’s are notoriously spicy, but they also add a great fruity flavour. If you don’t like spice though just leave out the Chilli or add a milder regular Green Chilli.
