Hummus is my go-to snack, when I’m craving something quick but healthy(ish). My creamy, garlicy hummus will always be at the top of this list.
I love making it because it is so quick, tastes really fresh and requires very few ingredients. Granted these ingredients are pretty specific but I try to keep a stock of one jar of chickpeas and one jar of tahini in the fridge at any time so I’m always prepared.
Whack it in a sandwich, load up carrots or pitta bread or just take a spoon to it – whatever your forte you will not be disappointed.

Ingredients

Hummus
⦁ 1 Jar Chickpeas
⦁ 4-5 Garlic cloves
⦁ ½ Jar White Tahini
⦁ Juice of one Lemon
⦁ 2 tsp Cumin Powder
⦁ 2 tbsp Olive Oil
Toppings
⦁ Toasted Pine Nuts
⦁ Olive Oil / Rapeseed Oil
⦁ Sea Salt
⦁ Sumac

Method

Blend Tahini in a food processor for 2-3 minutes.
Add Garlic cloves and blend again for 30 seconds.
Add Lemon Juice & Cumin Powder and blend again for 30 seconds.
Add 1 tbsp Olive Oil and blend again for 30 seconds.
Slowly add the Chickpeas to the mixer – add them in stages, so start with a few spoons at a time and then blend.
Once all Chickpeas have been added and fully blended you should have a smooth Hummus. The consistency should be a thick, whipped mix that gives some resistance.
Pour the Hummus out into your serving bowl & add 1 tbsp Olive Oil and give it a good mix until all incorporated.

Tips

⦁ Blending Tahini first for a few minutes makes it really smooth and guarantees creamy hummus!
⦁ Add a splash of cold water once you start blending the Chickpeas if the mixture becomes too thick and is difficult to blend it smooth
⦁ Now you can get creative with toppings! I like to add toasted pine nuts, sumac, more olive oil and a sprinkle of sea salt. If you prefer your Hummus plain or less of an intense garlic flavour just adjust your quantities. You can really use this Hummus as a great base to get inventive and add in all your favourite variations. (Lemon & Coriander, Harissa, Smoked Chipotle etc)
